Tom’s Birthday – A Trip into Unfamiliar Baking Territory

Anyone who knows our family knows that Tom does the majority of the real cooking around here and he definitely makes the better food – it’s further along the gourmet scale than my specialty Tuna Casserole. So when it comes to birthday dinners, Tom’s not all that jazzed about me doing the cooking. But I still wanted to do something special, so I offered to make a cake from scratch – and he wanted Lemon. I got really ambitious and decided to make this one.

I made the lemon curd and the cake. For the frosting I made a Lemon-Cream Cheese Frosting, so my cake looked a bit different than this one – no lemons and swirls on the top. My frosting was too soft. Actually – I really can’t call myself any kind of baker because my sweet bakery goods always come out looking a little sad. But despite the looks, this was a DELICIOUS cake. Sweet and tart and just yummy. All those layers with Lemon Curd sticking them together – so tasty! And it was a hit with Tom and the kids, so definitely a victory. And here’s my version …

And Tom got a smoker for his birthday – so we’re hoping for a BBQ weekend coming up here soon …
