Fall Bounty

I’m posting all the blog posts I thought about writing but never did write – and I know some of you (Erin, Mom) are dying to see the posts about our kitchen (and I promise they are coming) but in the meanwhile, I’m going to use those pictures I took and get these entries posted (I think this is the last non-remodel post).  How’s that for a really long run-on sentence??

My parents were kind enough to bring over a bunch of Utah corn this fall.  We were foolish enough not to get it eaten or frozen before it was too old.  Rather than waste all that corn goodness, I decided to dry it.  I figured it would make really good cornbread and I dried some of it with a sprinkle of salt and sugar because I read on-line that it made good snacking too.

For the last few summers I have tried to dry fruit too when the stores are having their good prices on fruit (I got pears for 50 cents a pound one week this summer).  The kids really like having dried fruit in their lunches as a change and it’s great for when we are out of fruit in the house and I don’t have time to get to the grocery store.  I’ve faced the fact that I’m probably never going to be the kind of housewife that cans stuff, but drying things makes me feel a little better about that!
